The catering trailer is specified around health inspection rather than around volume, and that is what separates it from a food trailer of similar length. A three-compartment sink for wash, rinse and sanitise. A separate dedicated hand wash basin, because washing hands in the same sink as equipment is the finding that closes an operation down. Hot water from a factory-fitted geyser rather than a kettle. A commercial range hood actually fitted, not a bracket waiting for one. Build and construction
Fully galvanised heavy-duty steel frame, insulated composite wall panels rather than plain Chromadek, and a commercial anti-slip aluminium checker plate floor. The insulation matters at this level: a composite panel resists heat and condensation, and condensation running down an interior wall over a prep counter is both a hygiene problem and a comfort one over a ten-hour function. Interior is 2.0 m wide and 2.5 m high with a 900 mm counter, both larger than the standard food trailer range. Four corner stabiliser jacks, dual lockable serving hatches on gas struts, and a double-leaf access door with non-slip steps.

Compliance and legal
At 1 750 kg GVM this is a braked, registered and licensed trailer. Confirm your tow vehicle rated braked towing capacity and tow bar rating before purchase. Trading requires a municipal Certificate of Acceptability under the Foodstuffs, Cosmetics and Disinfectants Act, assessed against surfaces, hand washing, hot water and extraction. Gas must be commissioned by a registered LP gas installer with a Certificate of Conformity, and the DB box should carry an electrical Certificate of Compliance. Tare mass is not published by the supplier and is required for licensing.

Questions about this trailer
Why does it need three sink compartments?
Wash, rinse and sanitise is the standard sequence a health inspector assesses against for equipment. A single-compartment sink makes that sequence impossible to demonstrate, which is why single-sink units struggle at inspection on a commercial catering operation.
Should I take 3.4 m or 4.0 m?
The fit-out is identical, so choose on your pitch and your tow vehicle rather than on equipment. If you regularly work venues with tight access or narrow gates, take the 3.4 m. If you work open marquee sites, the extra 600 mm is useful working room.
Is the range hood really fitted, or is it a bracket?
Fitted, along with the high-speed roof exhaust fan. That is one of the differences against the mobile food trailer range, where the hood is an optional extra on a pre-fitted bracket.
What certificates will I need?
A municipal Certificate of Acceptability to trade, a Certificate of Conformity from a registered LP gas installer for the gas installation, and an electrical Certificate of Compliance for the DB box. Venues increasingly ask for the last two before they let you on site.
Can it run off a generator?
Yes, it is generator compatible. Size the set for the geyser and any refrigeration start-up load rather than the running load, because the geyser element alone is a significant draw.
